Quick Cucumber Salad

INGREDIENTS

  • 6 small cucumbers

  • 1 1/2 white miso paste

  • 1 1/2 T ginger finely minced

  • 2 T rice wine vinegar

  • 1 T soy sauce

  • 1T sugar

TO MAKE

Cut the end of the cucumbers off, cut them lengthwise and then into half moons. Put the miso paste in a bowl and Siskin the other ingredients to combine. Then toss the cucumbers in the vinaigrette.
